About Me

Let's start off with my name. I am Kaleigh. I am 23 and I love food. Actually it is more than just love. I appreciate good food. Do not confuse food with the processed junk that you find littering our grocery store shelves, but real homemade healthy food (as you will see later, I have a few exceptions). I used to eat with no abandon. Fast food, junk food and everything processed. I felt like crap. So I decided to change. It was not an overnight change, but a slow step by step process. I started watching what I was eating. I cut back, I switched to sugar free, I cut out sodas, I abandoned sugar free. Eventually it led me to where I am today, and I am happy about that.

I started changing my  lifestyle (not diet, diets suck) around 2010. I felt like crap and I did not like the way I looked.

Now, I am in much better shape and feel great. I changed my whole outlook on food. I have always loved food, but I have a much greater appreciation for it. I no longer waste my time on crap, instead I indulge in worthy foods. Why waste calories on a crappy pizza, processed snacks, or mediocre sweets when there are so many wonderful foods out there? Speaking of wonderful foods, I love to cook. I live for the nights I am able to cook. Most of what I cook is healthy, but I do indulge, for example strawberry jasmine cupcakes with honey cream cheese frosting. Yep, I indulge. One of the things that is important to me (other than cooking healthy meals) is cooking with natural ingredients. I do not use margerine or artificial sweeteners. I am not a fan, but that is your choice. Feel free to substitute all you want. Another important food note: I recently gave up meat (aka I am a vegetarian). No, this does not mean my whole blog will be meatless and no, it does not mean I will try to convert you. I just want to write about delectable healthy food.
